SHOKUPAN

THOSE THAT HAVE BEEN TO JAPAN AND HAVE INEVITABLY FOUND THEMSELVES IN ONE OF THE MANY CONVENIENCE STORES WOULD HAVE COME ACROSS THE RANGE OF PERFECTLY PRESENTED SANDWICHES. SOME ARE FAMILIAR TO A BRITISH CONSUMER AND SOME ARE NOT, LIKE THE ‘KATSU SANDO’ AND THE ‘FRUIT SANDO’. AT FIRST IT DEOSN’T SEEM RIGHT TO BRITISH TASTES THAT YOU SHOULD HAVE FRUIT SANDWICH, BUT CONSIDER THAT WE HAVE ALL HAD A ‘JAM SANDWICH’ AT SOMEPOINT. THE ‘FRUIT SANDO’ USES JAPANESE FRUITS, WHICH ALWAYS SEEMS SWEETER, WITH WHIPPED CREAM INSIDE ‘SHOKUPAN’. SHOKUPAN IS A JAPANESE MILK BREAD, IT HAS A PERFECT CRUMB, SLIGHTLY STRETCHED AND FLUFFY, VERY WHITE IN COLOUR AND SLIGHTLY SWEET TO THE TASTE, IT MAKES FOR THE PERFECT SANDWICH BREAD, ESPECIALLY FOR THE ‘FRUIT SANDO’

Method

Shokupan or sometimes known as Hokkaido Milk Bread is gaining popularity in London but in Japan it is a daily bread which is having a resurgence in quality and use. Its distinctive white colour, perfect crumb and the natural life of the product lends itself to many uses. Anyone who has had experience making Brioche, pain au Lait, White sliced loaves will see some similarities in the method for making Shokupan. The ‘Yudane’ starter dough that is used for structure and strength is what makes it unique.

Process

The soft crumb, even throughout and the natural shelf life can be enhanced by using the correct process. As a Japanese product Rheon are obviously very experienced in the manufacturing of this bread. Their Stress-Free methodology lends itself to this bread and they have several pieces of equipment they use to achieve it.

 

VM300 System

A system for Shokupan can range from unit machine to full production lines. In Japan a typical Shokupan Line maybe the VM300. Take a look at the video to see it in operation

 

VX222 DIVIDER

In the UK and Ireland a more common machine for making Shokupan, delivering high quality products and very accurate weights maybe the VX222. This can be coupled with the ‘variety moulder’ for shaping and have panning systems for delivering the products to the tins.

 

Melon Pan

Melon Pan isn’t made with Melon, nor is it flavoured with Melon usually. The melon naming comes from the profiled top giving it the aesthetic of a melon or cantaloupe. It is sweet, enriched bread with a cookie like dough layer on top.

Melon Pan is usually a sweet dough with a hint of Vanilla but other varieties are popular. Our favourite in Cinnamon but Matcha is also popular

Frikandel in Buns

Please don’t think that Japanese products is all we do. We make products with our machines that are familiar to many different nations. For example have you ever tired Frikandel from the Netherlands.
